Valentine muffins

Ingredients: 

 

125 grams / 4½ oz margarine, 

300 grams / 10½ oz flour, 

175 grams / 6 oz sugar, 

2 tsp baking powder, 

2 eggs, 

pinch of salt, 

about 150 to 200 ml milk, 

200 grams / 7 oz cherries (without stones), 

100 grams / 3½ oz grated chocolate, 

muffin paper cases with heart pattern

 


For the icing: 

 

icing sugar, 

red food colouring, 

optionally sugar hearts or flowers

 



Beat margarine with sugar and salt until creamy.
Add the eggs. Sieve the flour into a bowl and mix it with baking powder.
Add flour and milk to the margarine mixture alternately until all flour is used up.
Stir in grated chocolate.


Spoon one half of the dough into 12 to 16 muffin paper cases.
Add the drained cherries, then the rest of the dough.
Preheat the oven to 200°. Bake for 15 to 20 minutes.


  
Stir icing sugar with water and food colouring. 

Coat the muffins with the icing. Before the icing is dry, 

put sugar hearts or flowers on top of the muffins.
